This coffee has a lovely balance of sweetness & brightness... and the aroma is very potent! I would call this a crowd-pleaser with a slight twist.

18 Rabbit Farms is a collective of farms owned by different members of the Zelaya Ontreras family. Dulce Marlen, the owner of Finca Dulce Luna, is the matriarch of the family, and the owner of 18 Rabbit exports. Her and her husband were pioneers of both organic and Biodynamic farming techniques, being intentional about naturally regenerating the soil they use for their agriculture.

Members of the 18 Rabbit family have placed in the top 10 for Honduras’ Cup of Excellence, and work together to create unique fermentations and cupping experiences for their partners.

The western region of Honduras where this coffee comes from enjoys distinct rainy and dry seasons. This facilitates the growth of beautiful, ripe cherries that can be washed processed and laid out to dry in the sun after the harvest.

The combination of microclimate, rich clay soil, and warm sunlight with careful washed processing composes a symphonic cup profile with bright acidity and notes of roasted almond, green apple, caramel, and vanilla.
